Smoked Salmon and Prawn Slice with a Chilli Lime Dressing

An easy to make and tasty starter, combining fresh ingredients with a dash of spice.

ingredients

8 slices smoked salmon
8 giant mediterranean prawns
4 oz Philadelphia cheese
1 tbsp vinaigrette
1 tbsp chopped chive
Salt and pepper
½ red chilli
½ lime zest
1 lime juice
2 tbsp soy sauce
4 tbsp olive oil
Chopped parsley
1 garlic clove
½ tsp sugar
12 whole chives

METHOD

1. Cut out 8 slices of smoked salmon into 2” circles. Chop rest of the salmon.
2. Mix the salmon with the cheese and chop up the prawns and mix in.
3. Add vinaigrette, chives and salt and pepper and leave to one side.
4. Lay one circle of salmon in bottom of a ring.
5. Spoon mixture on top and flatten.
6. Lay circle of salmon on top and shape flat.
7. Chop the chilli finely and mix with the lime zest.
8. Add juice of one lime, soy sauce and oil.
9. Crush garlic and add to sauce with sugar and parsley. Season.
10. Carefully remove salmon from mould and lay in centre of plate.
11. Drizzle sauce around using chives to decorate.
